Who We Are

Gastrotruck has had over 14 years in the business, and was one of the first food trucks in the Twin Cities. We have always been committed to sustainability and zero-waste practices. We believe that good food is not just about taste and presentation, but also about its impact on the environment and community.

Meet Catherine and Stephen,

the owners of Gastrotruck. Both of them are veterans of the hotel industry. Catherine, working in sales and catering and Stephen in culinary. Stephen has more than 30 years of culinary experience throughout the United States, Jamaica, and Puerto Rico. He was also the executive chef for Cosmos and the Graves 601 hotel. After losing his corporate job, the pair decided to start something of their own.

Since then, they have turned Gastrotruck into a successful catering business, with three trucks. They also own a brick and mortar restaurant, Carbon Kitchen + Market, and an event venue, The Luminare, both also in Northeast Minneapolis.

Our ingredients are sourced locally, partnering with those who share a similar commitment to responsible practices. This approach not only supports local businesses but also ensures that the food is fresh and of the highest quality. Meats, vegetables, grains - everything that goes into a Gastrotruck meal is selected with care and consideration. All of our sauces and condiments are made in-house, from scratch.

Carbon Kitchen + Market

Carbon is a fast-casual restaurant in Northeast Minneapolis. It was started to pay homage to our roots, pit beef and pit-fired cooking. Since opening in 2019, we have relocated to our current location and have expanded our menu. We cook everything from our meats to veggies over charcoal, hence the name, Carbon.

The Luminare

Our Minneapolis event space, opened in the spring in 2023, and offers a minimalist, industrial vibe that is the perfect blank canvas for any event. With over 11,000 sq. ft. of a totally open floor plan, the venue can host a number of events including weddings, corporate events, etc. The space can accommodate more intimate gatherings, or larger parties of up to 275 guests seated, or 500 reception style.
